Spiced Tomato Soup Cancakes

Ingredients

  • Vegetable cooking spray
  • 230g Plain Flour
  • 300g Caster Sugar
  • 2 teaspoon baking powder
  • 1½ teaspoon ground All Spice
  • 1 teaspoon ground cinnamon
  • ½ teaspoon Bicarbonate of soda
  • 1 can Campbells Condensed Tomato Soup
  • 100g Vegetable Shortening (Trex) - Butter can be used as an alternative, for best results use Trex
  • 2 eggs
  • 60ml Water

Step 1

Heat oven to 180°C or Gas

Step 2

Spray 7 empty Campbell’s soup cans with cooking spray. If not available muffin cases can be used

Step 3

Sieve the flour, baking powder, all spice, cinnamon, bicarbonate of soda into a bowl. Add the sugar

Step 4

Add the soup, shortening eggs and water

Step 5

Mix on a low speed with an electric mixer.

Step 6

When mixture is smooth divide equally into the cans (2/3 full) or muffin cases.

Step 7

Bake for 30 minutes or until a skewer inserted in the centre of the cakes comes out clean.

Step 8

Cool in the cans on a cooling rack. Remove the cakes from cans

Step 9

Drizzel the tops and sides with Orange icing

Step 10

Orange Icing

100g Icing sugar, 2 tablespoons of orange juice and 1 teaspoon of orange zest.

Place in a small bowl and mix until smooth
